Ah! This is one of my FAVORITE things to make! It's healthy, it's refreshing, and it's freaking delicious! It's also vegan!! I loveeee avocados, I can eat it plan with just some salt and pepper! OR spread it on some toast, it's nature's butter, SOO GOOD. This guac is all about the ingredients. It's not hard to make but it takes a long time cutting all the veggies, but it's definitely worth it!
3-4 Avocados (depending on the size of your avocado)
1/4 Red Onion
2 Garlic Cloves (optional)
Juice of 1 Lime
A bunch of cilantro
Cut everything up as pictured in Photo 4. LOOK AT THOSE COLORS! Then start mixing! Make sure your avocado is ripe. You can test if it's ripe by pressing your thumb into the avocado. If it's very firm, then it's not ready yet. If you can press down a little, then your avocado is good! Once you start mixing the avocados with the other veggies, you can see that all the veggies will start combining and the avocado holds everything together very well. Lime juice! So important to have that balance of acidity with the creaminess of the avocado! Connie always makes me add 2 limes because she lovessss lemons/limes. Please don't forget to season with salt and pepper. Salt will bring out the flavors in all the veggies!
This is a great dish for friends and family, or just for yourself (which is what I do LOL). I can eat guac with a spoon! I also sometimes add it to fresh made pasta. You may think that's weird, but avocado pasta is so creamy and delicious! Try it out and let me know what you think!
