I got Ellen a pasta machine for her birthday and we really wanted to make this pasta that I found online. I've made it before with regular store bought pasta and it was so good, we wanted to try the recipe again!
So unfortunately I read the pasta recipe wrong, so I told Ellen the wrong ratios of egg to flour. It's supposed to be 3 eggs to 2 cups of flour. But what we made was 2 eggs to 3 cups of flour. Obviously our dough was very dry, so we slowly added olive oil and water until it finally came together.
This recipe is really easy. Just blend together garlic, avocados, basil and lemon. I used a food processor. We roasted the cherry tomatoes for like half an hour to 45 mins at 350 degrees F.
When the pasta is done cooking, which should only take a few minutes since its fresh pasta, just mix all the ingredients together and voila! Don't forget to season with salt and pepper!
