Hello dear friends! This was something I thought up as I looked in my fridge to see what I had left to cook. It turned out to be a really tasty and flavorful dish! I made it as Ellen was watching the US Woman's soccer team play in the World Cup, INCREDIBLE GAME!
First start by cooking the quinoa because that takes the longest. I just cooked it in my rice cooker, but you can cook it on the stove too. The quinoa:water ratio is 1 cup uncooked quinoa to 2 cups water. That gives you about 3 cups of cooked quinoa. I had some fresh lettuce that I cut off the ends and peeled each leaf off. I then diced the onions and started to saute them in the pan. I added my corn and tomatoes, then quinoa and the beyond meat. You don't have to cook it for too long, maybe 5-7 minutes. I added some tabasco and cholula hot sauce. And that's it!
