This was SOOO GOOOD! I was really surprised at how tasty these were! Even my meat eating friends were like, WOAH. I found the recipe here. They have a number of delicious veggie recipes, I'm definitely a fan!
Green Sauce Ingredients:
Lemon juice (2)
Olive oil (if too thick)
Extra firm tofu
Chili powder (cayenne)
Salsa: Chop all vegetables (tomatoes, onion, corn, green onion, cilantro) and combine them in a bowl. Add salt and lemon juice.
Green Sauce: In a food processor, combine green onions, cilantro, 1/4 cup plain yogurt, 1/2 avocado, and lemon juice (2 lemons - we like our sauce more tart). Process until smooth consistency.
Crispy Tofu: Cut firm tofu into small cubes. Add 1/2 cup of sriracha and 2 tbs of honey. Mix thoroughly. In another shallow bowl. combine cornmeal, flour, garlic powder, cumin, chili powder (cayenne), salt, and pepper. Once tofu is coated with sriracha mixture, toss in with dry mixture until very well-coated. Make sure the tofu cubes are well-coated so when you pan fry them, they're extra crispy.
Fry tofu cubes in non-stick pan with some frying oil on medium heat. I used grapeseed oil. In another pan, you can warm up your tortillas.
Make sure all 4 sides of your tofu are fried. Be careful not to over fry them...I left mine on a little too long and they turned black :(. Once they turn golden brown you can take them off the pan. I let them cool on a few paper towels.
Making TACOS: Once all the ingredients are prepped, you can start assembling your tacos! I put about 5-6 tofu on each taco, but I have friends who put 8 haha! You can then add the salsa - we also cut up avocado slices. Then add your special green sauce, and top off with some cheese.
These tacos are surprisingly filling - I ate 3 and was STUFFED. They're so fresh and delicious. It's a great way to introduce a veggie meal to meat eating friends. Try these babies out and let me know what you think!
