This is a fun and tasty one! Still workin' on killin' that bucket of kimchi. I had some leftover rice..BOOM KIMCHI FRIED RICE. I love making fried rice because it's easy make and it's easy to pack for lunch. I've been working in Chicago these past few months (which is rare) so I'm trying to save money by packing lunch every day.
Rice or leftover rice
I first fry the eggs. I cook the eggs until they're not runny anymore. I don't want to overcook them because I don't like when they're too chewy. I then add the rice, then I salt and cover the pan. I chop the kimchi until they're in small pieces, I cut the green onions to the same size. Then, I add the kimchi and green onions to the rice. I also added some Lao Gan Ma hot sauce. Don't forget to taste the rice when you're cooking it. Sometimes I forget to season and it's too bland. Salt, pepper, and hot sauce are your friends! Only if you like spicy foods haha.
That's it my friends, I ate half and packed half for lunch. So yummy :). Try this recipe sometime, it's delicious.
