I haven't cooked with spaghetti squash in a while, I saw that it's in season so I thought to try it out. This recipe is simple because you roast all the veggies together. The most time consuming part is prepping the veggies.
Spaghetti Squash Recipe:
Preheat oven to 400 degree F.
Cut Spaghetti squash in half and oil and salt each half. I had to toss a quarter of my squash because it went bad :(. Place on baking sheet center facing up. Quarter mushrooms and dice onions. On another baking dish, combine onions, mushrooms and tomatoes. Season with salt, oregano, cumin, garlic powder and toss in olive oil.
Broccoli Soup Recipe:
Cut broccoli, onions and potatoes. Toss in olive oil, salt and pepper.
Place all 3 trays of veggies into the oven for 40 minutes.
When 40 minutes is up, take out tomato/mushroom/onion tray. Put the broccoli tray on top and spaghetti squash to bottom tray. Switch oven to broil for 5 minutes. I like my broccoli to be slightly charred for extra flavor.
During the 5 minutes of charrin' up my broccoli, I start warming up a half carton of veggie broth. Once the broccoli is done, I transfer the broccoli/potato/onion mixture into the veggie broth to cook for 10 minutes. Once the veggie and broth have come to a boil, I put everything in my Vitamix to blend. The color was a little brown, so I added a handful of spinach to make it more green - kinda cheating, but not really!
Time for our spaghetti squashin' shreddin'! Take two forks and start shredding the squash. I have a short video below to show you how I did it. Be careful the squash is very hot, I definitely burned my fingers a few times. I get so anxious when it comes to food, but you have to be patient with hot foods! Lesson learned. In a separate pan, I fried some sage in butter. Once I finished with the squash, I transferred the "spaghetti" to my pan with sage butter and added a handful of spinach. Then I added the tomatoes, mushroom and onions to the squash.
This process sounds more complicated than it really is...prepping the veggies take a long time, otherwise it's a very straightforward meal. AND HEALTHY! Actually it was too healthy, so we cut some bread to eat with our broccoli soup LOL. You should do that too!
